Inspired by Afghan tandoor traditions and refined in Punjabi kitchens, Afghani Chicken Tikka has become one of the most-loved starters at BABA CHICKEN in southeast Edmonton. The marinade is what makes it special — a mild, fragrant blend that lets the natural sweetness of the chicken come through, rather than masking it with heat.
We marinate our chicken for hours so the spices penetrate every fibre, then thread it onto skewers and lower it into the live-fire tandoor. The result is a juicy, lightly charred tikka with a creamy, almost luxurious flavour. Serve it with mint chutney and a fresh lemon wedge.
