Bone-in chicken pieces are scored and marinated overnight in spiced yogurt, then lowered into the live-fire tandoor where the high heat seals in moisture while imparting deep, smoky char.
It's lightly spiced — built more around aromatic warmth than heat — making it a perfect introduction to Indian tandoor cooking for newcomers and a comfort staple for long-time fans. Naturally gluten-free, plated with onion rings, lemon and mint chutney.
We use bone-in pieces because the bone keeps the meat tender and juicy through the high heat of the clay oven. Every piece is cooked low and slow on the live flame — never par-cooked or microwaved.
